These pumpkin pinwheels are a great new way to use pumpkin!

Ingredients
Cookie Dough
1 cup shortening        Â
4 cups flour of choice
1/2 tsp. baking sodaÂ
2 cups coconut sugarÂ
3 eggs
​Filling​
2 cups cooked pumpkin  Â
1 cup coconut sugar     Â
1/2 tsp. pumpkin pie spice
 ​
Preparation
Step 1
Preheat the oven to 400 F.
Make the cookie dough, cream the sugar and shortening together.
Step 2
Add eggs.
Step 3
Mix flour and baking soda, add to batter.
Step 4
Divide dough into thirds, roll each part on a cookie sheet, into a rectangle about 8"X12".
Step 5
Make the filling, mix all the ingredients together.
Step 6
Cook the filling on low heat until thick. Then let cool.
Step 7
Spred a third of the filling on each part of the cookie dough. Roll them up and place them in the freezer until firm.
Step 8
Once firm take them out of the freeer and cut them into fourth inch slices.
Step 9
Bake for 8-10 minutes.
Step 10
Let them cool and enjoy!
