About the Recipe
An easy pumpkin pancake recipe.
Ingredients
4 1/2 cups flour
4 tablespoons baking powder
3/4 cup coconut sugar
1 tablespoon cinnamon
1/4 teaspoon nutmeg
6 eggs
1 cup milk (any milk or water works)
1 15 oz. can pumpkin puree ( or 2 cups fresh)
12 tablespoons butter
Preparation
step 1
Mix the dry ingredients together in a large bowl.
Step 2
Place the pumpkin, eggs and milk in a blender and blend until frothy.
Step 3
Mix the pumpkin mixture into the flour being careful not to over mix.
Step 4
Melt the butter in a saucepan. Once the butter is melted add it to the batter.
Step 5
Melt a tablespoon of butter on medium heat in two large frying pans.
Step 6
Drop the batter on the frying pans using about 1/4 cup per pancake.
Step 7
Fry on one side until the pancakes hold together when you lift an edge up.
Flip and cook until done.
Step 8
Serve with butter and maple syrup.
