Summer Squash: Our Favorite Recipes

Whether you grow zucchini, yellow squash, or one of the less common varieties such as Patty Pan or Italian Trombone, they can all be used interchangeably in most recipes, and they tend to produce far more than most people eat on a regular basis.



In this blog I will share our two favorite recipes we have tried so far. We have been growing yellow squash for years and never really had a problem with squash bugs.




However, this year we have lost several plants to them. Italian trombone squash is not supposed to get bothered by those bugs, so we ordered seeds and planted some this morning, we will see how they do...




Oatmeal Raisin Squash Bread


This bread basically tastes like oatmeal raisin cookies, you really can't tell it as squash in it at all as long as you bake it until it is fully done, and you let it cool before eating.


  • 6 cups rolled oats ground to flour in a blender

  • 2 TBSP cinnamon

  • 1 tsp. nutmeg

  • 1 tsp. baking soda

  • 1 tsp baking powder

  • 2/3 cup milk (any kind)

  • 2/3 cup sugar (or equivalent sugar replacement)

  • 4 eggs

  • 4 cups shredded summer squash (do not squeeze dry)

  • 2- 4 cups raisins (depending on your liking, you can also use chocolate chips or other dried or fresh fruit)

Instructions

  1. Preheat the oven to 350F

  2. Mix all the dry ingredients in one bowl and all the wet ingredients in another, mix well.

  3. Combine the wet and dry ingredients.

  4. Pour the batter into either two loaf pans or one 9X13 pan lined with parchment paper.

  5. Bake for 45 minutes or until a butter knife inserted in the center comes out clean.

  6. Wait 5 minutes then remove the loaf from the pan and place on a cooling rack until completely cool.

  7. Enjoy!



Apple Sauce

Two things we have learned are very important for good apple sauce, always peel the apples, if you don't the skins curl up and it's like you put straw in it, and do not drain the juice, you will end up with very thick apple sauce that isn't very sweet.


  • 5 lbs. apples peeled, cored and roughly chopped

  • 2 medium zucchini ends trimmed and roughly chopped

  • 2 TBSP lemon juice

  • 2 TBSP cinnamon

  • 2 cups water

Instructions

  1. Put all the ingredients in a large pot.

  2. Cook over medium heat until the apples and zucchini are very soft.

  3. Transfer to a blender (you may need to do it in batches) and blend until smooth.

  4. Chill and enjoy!


Squash can also be enjoyed in eggs, spaghetti dishes, or combined with pesto and either chicken or hard-boiled eggs. Using a spiralizer, squash can be turned into noodles.
